Roasted Asparagus with Lemon Orzo


Roasted Asparagus is delicious on its own!

Had a bunch of asparagus, and needed to make a side. I wanted nothing complicated, super simple, and found this. Hat tip, Supper For A Steal.

Recipe (3-4 servings):
1 cup orzo (whole wheat or regular)
¼ cup lemon juice
¼ teaspoon salt
pinch of pepper
Olive oil
bunch of asparagus spears (I used skinny)
2 tablespoons chopped flat leaf parsley

Preheat oven to 450 degrees. Snap tough ends off of asparagus. Toss with ½ tablespoon olive oil, pinch of salt and pepper. Spread on foil lined baking sheet and bake 10-12 minutes until tender.

Bring pot of water to boil and cook orzo according to package directions. Drain and set aside.

Whisk together lemon juice, ¼ teaspoon of salt, and pepper. Slowly add in 1 tablespoon olive oil whisking to combine. Toss orzo with sauce.

Cut slightly cooled asparagus into 1″ pieces. Stir parsley and asparagus in with orzo and serve.
